Steganos LockNote is Notepad for the especially security-conscious. It's a basic text editor--in fact, it looks almost exactly like Notepad--backed by AES 256-bit encryption. It's an open source project, free to download, and runs on Windows. Just because you're paranoid doesn't mean they're not out to get you.
